You are all going to gasp in disbelief and utter disgust when I tell you this, but Costco’s already prepared and pre-packaged food is the bomb. Alright, that probably wasn’t a secret, but…
I’m a food blogger who buys already prepared food. It’s almost shameful.
You have to remember that I, like most people these days, wear many hats. There are days where I can barely breathe let alone find time to cook.
Sometimes, when I find I can keep my head above water for a second, I make awesome stuff out of this already prepared food. I should probably just save it until the next time I’m drowning, but you know how it goes.
So, run to your local Costco and get the star ingredients of these kebabs:

By noon I had cleaned my kitchen, the nursery, and my bedroom, worked out, gone grocery shopping, registered my car, taken baby girl to the remote and, if I’m being completely honest, slightly sketch park near the auto shop, didn’t even get murdered, came home, got ready for the day (Yeah… I even washed my hair), started a batch of cinnamon rolls, and last but not least I did a load of laundry.
Now when I say did a load of laundry I mean that I ran a load through the wash.
Okay, when I say I ran a load through the wash I mean that I just started the washer again because I had forgotten about the load of towels that I washed yesterday.
Today is officially owned.
I just maybe, probably, totally shouldn’t tell you that the little one might have had Cheetos for breakfast this morning. Then the day would officially belong to somebody else who takes better care of it.
- 3 chicken breast halves cut into 1/2" chunks
- 1/2 fresh pineapple, cut into chunks
- 1 green bell pepper, cut into chunks
- 8 oz. package whole white mushrooms, quartered
- 1/2 package meatballs, cut in half
- 1 package bacon, cut into thirds
- 1 red onion, cut into chunks
- 3/4 cup sugar
- 3/4 cup low sodium soy sauce
- 6 tablespoons cider vinegar
- 3/4 teaspoon ground ginger
- 3/4 teaspoons minced garlic
- 1/4 teaspoon pepper
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- If you are using wooden skewers soak them in water for at least 30 minutes.
- Prepare your teriyaki sauce by mixing sugar, soy sauce, vinegar, ginger, garlic and pepper together. Pour half of sauce mixture into an airtight container and put in fridge until ready to use. Use the remaining half as a marinade for the chicken. Marinade the chicken for at least 1 hour, or up to overnight. When finished marinating, start assembling kebabs. There is no special order, and the kids will even have fun making their own kebabs for dinner! (hint hint)
- When all ingredients have been used grill them until the chicken is cooked through.
