- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 teaspoon vanilla
- 1 1/2 cups chopped fresh strawberries
- 3 teaspoons sugar
- 1/2 teaspoon cinnamon
- Preheat oven to 400°F. Spray a muffin tin with non-stick spray to prepare it.
- Cream butter and sugar. Add the egg and mix well. In a separate bowl add flour, baking powder, and salt. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently fold in strawberries.
- Spoon batter into prepared muffin pans. Combine sugar and cinnamon and sprinkle liberally over muffins. Bake in preheated oven for 20-25 minutes. (Make sure to eat these the same day that you make them because the strawberries will start to liquify by the next day.)
I don’t even know why I watch this show.
