Rosemary & Thyme Roasted Veggies

You guys. Yesterday was Valentine’s Day… and it was the worstbest (thanks for the new word, Kelli!) Valentine’s Day ever.

Okay, rewind to Saturday. Baby Girl and I are hanging out, being awesome and cute like we always are. Or it was mostly just her being cute and awesome, but I thought I’d throw myself in the mix. 

So anyway, I don’t really know how it happened but somehow her fingernail ended up embedding itself into my eyeball.

I really didn’t think much of it, other than that I was 99% sure that my eyeball was bleeding back into my head and filling up the cavity in-between my brain and my skull. But whatev. I’ve definitely experienced worse… like, you know, child birth and stepping on legos, and stuff. 

So, I made Mr. T go and buy me an eyepatch. And some ice cream. And then I went to bed early while he got Baby Girl ready for bed and cleaned the kitchen. BEST. NIGHT. EVER. Right? 

Yeah. That’s what I thought, too. 

I slept through the night, only waking up occasionally to an exploding burst of pain coursing through my face. But… no crying babies, so who is the real winner here? 

Fast forward to Valentine’s Morning. I wake up on my own, without a toddler poking me in the face to wake me up (WIN), and a soft morning light is glowing through the slats of the blinds. The house is quiet and I am warm and comfortable underneath my soft blankets. 

I turn around to face my Valentine and he’s awake, smiling sweetly at me. I say “Good morning,” in the sweetest voice I can muster after having just woken up (so basically I sounded like a 98-year-old chain smoker). 

It was only then that I realized I could barely open my right eye. My head shot off the pillow and I started muttering things about being blind, and other things about the Hunchback of Notre Dame… I don’t really know, it’s all kind of a blur at this point.

And my dear, dear husband. Bless his heart. I turned to face him and scream/yelled, “Is it really that noticeable?!” and he replied very calmly, “I can’t even tell.” 

I will love this man forever and ever. Even if he was a big fat liar at the moment.

He spent the rest of the day taking care of me and shuttling me to and from the doctor. 

Our Valentine’s Day didn’t really go as planned, but boy do I love my man. 

Luckily, eyes heal really fast, so I’m already on the mend. But, hot dang, Baby Girl nailed me. (GET IT?!)

Anyway, let’s talk about these veggies because they are DELISH. 

They are coated in olive oil and herbs and then roasted in the oven until they are crispy on the outside and soft on the inside. Then they are sprinkled with freshly cracked salt and pepper hot out of the oven. Easy peasy and you’ve got yourself a flavorful, healthy side dish perfect for any dinner. 

I love how roasting vegetables brings out a beautiful caramelized flavor that you don’t get anywhere else. 

And how cute are those little carrots? Right?! I found them in the refrigerated part of the produce section at the grocery store. I just love those little guys.

These veggies are my new go-to side dish! So deliciously fresh and SOOOO easy!

Ingredients
  1. 1 1/2 lbs. new red potatoes, washed well and quartered
  2. 1 package long young carrots, washed well
  3. 3-4 tablespoons olive oil
  4. 1 tablespoon dried rosemary
  5. 1 tablespoon dried thyme
  6. salt and freshly cracked black pepper, to taste
Instructions
  1. Preheat oven to 350° F.
  2. In a medium sized bowl combine potato chunks, carrots, olive oil, dried rosemary and dried thyme and toss to coat the vegetables.
  3. Pour onto an un-greased cookie sheet and bake in the preheated oven for 35-40 minutes, stirring about halfway through to ensure even browning.
  4. Once done baking, sprinkle salt and freshly ground black pepper over top, to taste. Serve immediately while still warm.

Awwww…. If they weren’t so delicious they would almost be too cute to eat.
