Lemon Squares

Oh sad… I just realized I am seriously out of touch nowadays. 

Actually, have you guys ever heard the song #SELFIE?

When I listen to that song it makes me really happy that I am so out of touch. If that’s considered cool, I would rather drive a newly sharpened pencil through my own eardrums than be cool and listen to it again.

That would probably hurt really bad.

But it would be worth it. 

Or I’ll just stuff these lemon bars into every orifice on my head, and I won’t be able to hear it.

But at least I’ll be smelling and tasting these delicious lemon squares. 

Seems like a win-win.

Lemon Squares
These are the best lemon squares I've ever had, with fresh lemon juice and lemon zest, they are refreshing and perfect!

For the Crust
  1. 1 cup butter
  2. ½ cup white sugar
  3. 2 cups flour
  4. ¼ teaspoon salt
For the Lemon Filling
  1. 1 ½ cups white sugar
  2. 5 Tablespoons flour
  3. 4 eggs
  4. ⅔ cup freshly squeezed lemon juice
  5. lemon zest - optional
For the Crust
  1. Blend all ingredients together and press into ungreased 9x13 pan. Bake at 350° F for 15-20 minutes.
For the Lemon Filling
  1. Whisk together sugar and flour. Mix in remaining ingredients. Pour over baked crust. Bake for an additional 20 minutes.

These lemon squares are the BOMB.COMI’ve never really liked lemon squares until I had these ones.

Now I can’t stop thinking about them.

I kind of wish they were stuffed into my nose, ears and mouth right now, because then at least they would be in my mouth.
