I’ve never been to the Kentucky Derby but I feel like I belong there after having this pie.
Plus, I like horses. And big hats. And chicken. Kentucky fried chicken? Is that at the Kentucky Derby? All I know is that the extra crispy colonel totally creeps me out. I refuse to believe I’m the only one that gets the heebie jeebies during that commercial.
And yeah… I totally had to google how to properly spell heebie jeebies.

Let’s talk pie because HELLO… Thanksgiving is THIS WEEK! It’s only two days away and I’m already gearing up for the big day.
Pies are almost as essential to the success of Thanksgiving dinner as the rolls are. Or the turkey. Or whatever you think is the most important part. Mr. T thinks the most important part of Thanksgiving dinner is gravy.
Yeah. You read that right. GRAVY.
I like the way that man’s mind works… But gravy. C’MON BABE!
I mean… look at this pie.
It’s ooey and gooey and the stuff of legends.
I thought it sounded weird… a chocolate chip cookie baked inside of a pie shell. But then I figured… chocolate chip cookies = awesome. Pie shells = awesome… why not?
Why not indeed. This pie was AWESOME!
The chocolate chip filling forms this sugary crust across the top that you have to crack into to cut it open and then the filling is SOOO gooey and perfect inside.
And then the pecans are like, the best thing that’s ever happened to me. Jeez. This pie is a revelation.
With a scoop of vanilla ice cream on top, no one will be able to resist this sucker.
Baby Girl and I made these together. Her’s is exactly half the size of mine, and I must say, she did a pretty dang good job.
Always an adventure cooking with that one. Girlfriend will be able to join us before I know it. Hopefully everyone survives.
- 1/2 cup butter, melted (I always use salted)
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon kosher salt
- 1/2 cup all-purpose flour
- 1 cup roughly chopped pecans
- 1 cup semi-sweet chocolate chips
- 1 unbaked pie shell ( my crust recipe\ is awesome)
- Preheat oven to 325° F. If making your own pie crust, make it, roll it out and place in a standard nine inch pie dish.
- In a large bowl, mix butter and sugar together until blended. Add eggs and vanilla and mix well. Then add salt and flour, and mix until thoroughly combined. Fold in chopped pecans and chocolate chips.
- Pour mixture into pie crust and bake in preheated oven for 1 hour.
- Allow to cool for 1-2 hours before slicing and serving. Serve with a dollop of whipped cream, vanilla ice cream, chocolate sauce, leftover chocolate chips and pecans, or whatever else sounds awesome!
