Friends, you may or may not know this about me, but I love a nice chicken salad sandwich.
It’s hard to justify having one one a regular basis just because it’s basically only mayonnaise… NOT anymore peeps!
Check out this recipe featuring greek yogurt and you will never go back to your plain old boring mayonnaise chicken salad.
I am not a huge fan of greek yogurt. I try really really hard to be a fan. I do. I’ve tried it so many times, and I’ve heard that if you try something enough that you develop a taste for it, so that’s what I’m going for because it is SO good for you! BUT I have gotten really good at masking the flavor because I still want all the benefits without the taste, because like we have discussed, I don’t love the taste… YET.
But you seriously can’t even taste the greek yogurt in this. I could totally make Mr. T eat it and he would never know. I like to hide healthy things in his food. Let’s keep that between you and I.
I like to pretend like he hasn’t totally caught onto that fact.
- 2 cups shredded rotisserie chicken
- ½ cup greek yogurt
- 3 tablespoons lowfat mayonnaise
- 2 stalks celery, chopped
- ½ cup grapes, halved
- ¼ cup sliced almonds
- salt and pepper to taste
- Add all of your ingredients to a bowl and mix together.
Or eat it straight out of the bowl with a spoon.
You can’t go wrong here.
