This is one of the key ingredients in one of my favorite side dishes of all time.
This recipe was given to Famous Julie by Mama Mackey.
I have known Mama Mackey for as long as I can remember. She really is my second mom. I can’t think of a single significant event in my life where she wasn’t there supporting me. I love this lady, and because she is one of the best cooks I’ve ever known, you will come to love her as well!
So, here is the first of many recipes that have been passed down by Mama Mackey.
It’s a doozy. A DELICIOUS doozy. A simple, quick, delicious, flavorful doozy.
- 2 pounds green beans
- 8 oz. mushrooms, sliced
- 4-5 garlic cloves, minced
- 1/4 cup butter
- Salt and pepper, to taste
- Shredded parmesan cheese
- Bring a large pot of water to boil. In the meantime, chop the ends off beans. Boil green beans and when they are almost soft (about 8 minutes) add mushrooms and cook until soft (about 3 minutes). Drain water. Add butter, garlic, salt and pepper. Let beans cool a little before adding cheese. Serve!
I like to think that vegetarians know their way around a vegetable dish.
