Cranberry White Chocolate Bread Pudding

Merry Christmas Eve, peeps!!! 

I’m so super stoked for Christmas this year. Baby Girl has been so fun and obsessed over Santa. Like, full on fangirling every time. Until he tries to talk to her, then she clams up and stares straight at her feet. 

She thinks EVERY dude that has a white beard is Santa. Pretty sure that every dude with a white beard thinks he is Santa as well, though. 

Anyway, whenever Santa sees Baby Girl he usually likes to come and talk to her. She is so shy if she could dig a hole and crawl into it, that’s exactly what she would do. She gets this adorable tiny smile on her face and bats her thick eyelashes as she stares at her feet and mumbles that she wants “presents” for Christmas. {HOLLA! That makes my job easy. I mean, Santa’s job. Eh hehm.} 

As soon as Santa leaves, she (without fail) turns to me and yells, “SANTA LOVES ME!!!!” 

Santa totally does love her. Like, a lot. 

What are ya’ll making for Santa on Christmas Eve? Milk and cookies? Pie? Bread pudding? What? That’s not a thing? Oh. 

 OOOOOOHHHH YYYYEEEAAAHHHH. Is it a thing now?!?! 

Seriously though, guys. This is in my top three favorite Christmas desserts. It’s INSANELY GOOD. 

When I first heard of bread pudding I was like: 

Sounds so weird to me. But it doesn’t even matter because I LOOOOOVE. I love. I love. I love.

Like almost as much as Santa loves Baby Girl and we already decided that was a lot. 

But, get this: this beautiful creation only has seven ingredients in it: cream, sugar, vanilla, eggs, bread, cranberries and white chocolate. Boom. Done. Best dessert ever. 

I don’t take praise, only accolades in the form of money thrown my direction.

Ingredients
  1. 4 cups heavy cream
  2. 1 1/2 cups sugar
  3. 2 tablespoons vanilla
  4. 12 eggs yolks
  5. 1 loaf of day old french bread, cut into 2 inch cubes
  6. 2 1/2 cups fresh cranberries
  7. 2 cups white chocolate chips
  8. Extra sugar for sprinkling
Instructions
  1. Preheat oven to 350° F.
  2. To the bowl of a double boiler (or in a makeshift double broiler) OR a pan shaped like a bowl (like a wok or something similar) mix together heavy cream, sugar and vanilla. Bring to a simmer and add 12 egg yolks mixing continuously while pouring in. Bring to a simmer again.
  3. Add bread cubes to a large bowl and pour sauce over top, saving some sauce for garnish. Don't add too much sauce or it will become mushy. Toss together and add fresh cranberries and chocolate chips and mix together. Pour into a greased 9x13 pan making sure not to press bread down! Sprinkle liberally with sugar and bake in preheated oven for 30 minutes or until golden brown.
  4. Serve warm with extra sauce poured over top.
