Chocolate Truffle Cupcakes

These cupcakes are REALLY REALLY REALLY REALLY REALLY awesome. 

Also, I seriously can’t get over this Nutella Frosting so I just put it on all the cupcakes and cakes and desserts and sometimes I don’t even put it on anything. 

You think you like going at a plain Nutella jar with just a spoon? Try whipping it up with some powdered sugar and heavy cream and see where that gets ya. 

Also, the truffle surprise inside of these babies is smooooooooooooth. 

Like, almost as smooth as I am.

Last week I was shopping at Walmart and walked away with a giant tub of cottage cheese that I discovered upon arriving home no longer had a proper safety seal. 

I popped it in an empty Walmart bag to take it back, and placed the receipt on the lid as I needed both of them later.

Then, I placed it in the car with my bags and toddler and took off to run errands for the day. 

Upon arrival to Walmart, Baby Girl had her fill of errands (it was the first one. FYI.) and proceeded to throw a fit about having to sit in the cart. 

I distractedly set my return on the Customer Service counter and immediately turned around to tend to my flailing child. 

I heard the attendant ask me from behind the counter if I had a receipt along with my return. I glanced over my shoulder to quickly tell her, “Yeah, it’s in there.” While gesturing toward the bag. 

She cleared her throat and asked, “In the cottage cheese?” 

I whipped around to see that the giant container had exploded and the receipt was swimming in 2% large curd. 

I grimaced as she angrily grabbed a pair of disposable gloves and dug the receipt out. As she lifted it out of the bag, chunks of cottage cheese dripped off and onto the counter. 

All I knew to say was, “I’m so sorry!” over and over again with no response. 

Well, guess who got their $5.38 back? That’s right. 

Who’s not smooth now?

For the Cupcakes
  1. Your favorite chocolate cupcake recipe, OR My double chocolate cupcakes recipe!
For the Nutella Frosting
  1. BEST NUTELLA FROSTING EVAH.
For the Chocolate Truffles
  1. 1/2 cup heavy cream
  2. 1/2 cup salted butter
  3. 2 cups semi-sweet chocolate chips
For the Cupcakes
  1. Follow the directions according to the recipe
For the Nutella Frosting
  1. Follow the directions according to the recipe
For the Chocolate Truffles
  1. While the cupcakes are baking, in a medium saucepan over medium heat melt the butter. Add heavy cream and mix together until just starting to boil. Turn off the heat and add chocolate chips. Let rest for several minutes for the chocolate to get nice and soft. Then stir until smooth. Pour into an 8x8 baking pan and place in the refrigerator for a couple of minutes so it's not quite so runny.
To assemble
  1. Spoon or cut the centers out of the cooled chocolate cupcakes and using a small cookie scoop, scoop out 24 small balls of the solidified chocolate mixture. Place into centers of cupcakes. Pipe Nutella Frosting on top and store in the refrigerator until ready to eat.
