So… I’ve been thinking, and we need to have a little chat (Did that sound a little softer than, “We need to talk.”?? I think I pee my pants a little whenever someone tells me, “We need to talk.” Am I right?).
So, here’s the deal. Up to this point, this blog has been all about what we are having for dinner, and what we are having for dessert, and what I’m stuffing into my hungry volleyball girls and things I make for my wild little boy scouts… but I feel like it’s time to challenge myself.
You see, I’ve been doing the same old same old for about 3 years now, and I have never allowed myself the time to really pursue the thing that makes me the happiest when I’m in the kitchen. And that thing is baking. Don’t get me wrong, I absolutely love to cook, but baking is what really gets my heart pumping (It’s probably all the sugar… I should definitely see someone about that.).
But, I’ve always wanted to get like, REALLY good at baking. Like, STUPID good. Like, the kind of good that only your grandma can be because she’s been baking FOREVER. Like, the kind of good that people wonder if I have professional training or not (I watch Master Chef Jr… does that count?).
So, things around here might start to look a little bit different. I’m sure the occasional dinner recipe will show up every once in a while, but for the most part, I’m going to be blogging about things that I made, because I truly enjoyed making them. And for anyone out there who is a beginning baker, I would love if you would follow along with.
I am not a true beginner. I’ve been baking for many years now, but I have SOOOO much to learn it’s not even funny. And there are many things that I’ve never even tried! Like focaccia! I claim to be someone who loves to bake and I’ve never even made a focaccia?! I’ve never tried to make croissants or donuts or babka.
I did try to make bagels last month. YEESH. Let’s just say those will be going into the Kitchen Fails category soon.
But, I love you guys so much for sticking with me. Truly. You make this blogging thing so worthwhile. It’s crazy to think that there are people out there that care about my cookie recipe, and want to read about Baby Girl’s exploits. You truly make me happy, so from the bottom of my heart, I thank you.
OKAY! Enough with the mushy stuff. Let’s look at cookies:
These, my friends, are Mr. T’s FAVORITE cookies.
Yeah. They are pretty awesome. AND SO SUPER EASY YOU WILL JUST WANT TO CRY. Seriously though, they are almost embarrassingly easy. It’s almost embarrassing that I’m even putting them on this blog. This officially super serious baking blog (HA! I couldn’t even type that without cracking a smile).
Because they use a *whispering* boxed cake mix. SSSSHHHHH.
But, It’s awesome because they are so soft and mushy and YUM.
Trust me, I’m not one to scoff at a shortcut or two. They make life so much easier in a world that’s just trying to make everything way more complicated than it needs to be. So, I will proudly exclaim from the rooftops that these are made with a store bought cake mix.
Except, I don’t think I could lug my big six-month pregnant belly up onto the roof at this point, so I’ll just shout it from the sidewalk, if that’s cool.
- 1 Devil's Food Cake Mix
- 1/2 cup butter, softened
- 1 teaspoon vanilla
- 2 large eggs
- 1/2 cup chopped nuts (if desired)
- 1 cup semisweet chocolate chips
- Preheat the oven to 350° F.
- Beat half the dry cake mix, the butter, vanilla and eggs in a large bowl on medium speed until smooth. Stir in remaining cake mix, nuts and chocolate chips.
- Drop onto an un-greased cookie sheet and bake for 10-12 minutes (They should still look a little under baked when you pull them out).
- Allow to cool on the cookie sheet for 5-10 minutes before removing to a cooling rack.
- *My cookies here obviously don't have any nuts in them, but if you want to put nuts in yours, I think walnuts or pecans would be AMAZING!
I like my cookies pretty under baked. Like, fully under baked. Like, I just like cookie dough.
