Yesterday was my big brother, Skylor’s birthday.
So Sky, I made these birthday cookies in your honor so you could like, look at them?
I wish you could taste them because they. were. GOOOOOOOOOOD.
I also wish I didn’t live so far away because I totally would have brought you some, but it’s the thought that counts right?
For example… here’s a picture of us riding an elephant together in Nepal.
If that doesn’t look like a good time, then you’ve obviously never ridden an elephant before.
So here’s more cookies.
- 3/4 cup butter, softened
- 1 1/4 cup packed brown sugar
- 2 teaspoons vanilla
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 large egg
- 2 1/4 cup flour
- 1 cup toffee bits
- 1 cup chocolate chips
- 1 cup chopped pecans
- Cream butter, sugar, vanilla, salt and baking soda together. Add eggs and beat until fluffy about 3-5 minutes. Add flour and beat just until combined. Stir in bits, chips and nuts. Cover with plastic wrap and refrigerate for at least 2 hours.
- Drop by generous spoonful (I use my 3 tablespoon cookie scoop) on a cookie sheet lined with parchment paper or a silpat baking mat. Bake at 375° for 8-10 minutes. Cool on sheet for 5-10 minutes before removing to cooling rack.
- *I usually ALWAYS bake my cookies for the least amount of time possible. They usually look a little under-baked when I pull them out but they will continue to bake on the cookie sheet and will stay SUPER soft when you store them in an airtight container.
